The Mojito is a Cuban highball that combines light rum, fresh lime, mint, sugar, and soda water into a drink that feels both refreshing and structured. The best versions gently press mint with sugar and lime to release aromatic oils without extracting bitterness. Built over ice, the drink gains lift from chilled soda water, keeping the profile dry and bright. Havana’s La Bodeguita del Medio helped popularize the modern form in the mid twentieth century.

A tall highball glass of Mojito packed with mint sprigs, lime wheels, and sparkling soda over ice.
