The White Negroni keeps the Negroni’s equal-parts logic but swaps Campari for gentian liqueur and red vermouth for blanc vermouth. The result is paler, more floral, and distinctly grapefruity in its bitterness. Stirred and served over a large cube, it drinks crisp and aromatic rather than dense and brooding. The gentian component gives a long, tonic-like finish that highlights the gin’s botanicals in a different register than the original.

Wayne Collins improvised the White Negroni while working in France, and PunchDrink notes that the drink spread through bartenders’ word-of-mouth long before brands promoted gentian liqueurs to home drinkers.
