White Negroni
A bright, herbal, bittersweet twist on the Negroni with gentian liqueur and blanc vermouth.
The White Negroni keeps the Negroni’s equal-parts logic but swaps Campari for gentian liqueur and red vermouth for blanc vermouth. The result is paler, more floral, and distinctly grapefruity in its bitterness. Stirred and served over a large cube, it drinks crisp and aromatic rather than dense and brooding. The gentian component gives a long, tonic-like finish that highlights the gin’s botanicals in a different register than the original.

Ingredients
- • 1.5 oz gin
- • 1 oz Suze or other gentian liqueur
- • 1 oz blanc vermouth
- • Lemon twist

Bartender's Note
If using an especially bitter gentian like Suze, start with a slightly smaller measure and adjust upward to taste.
How to make the White Negroni
