The Bennett is essentially a Gin Gimlet made with fresh lime and simple syrup (instead of cordial), seasoned heavily with Angostura bitters. It strips away the cooked-sugar taste of Rose's Lime Juice, replacing it with the fresh bite of citrus and the spice of bitters. It is a cleaner, sharper, and more aromatic version of the mid-century standard. It proves that bitters belong in sours.

  • 2 oz gin
  • 1 oz fresh lime juice
  • 0.75 oz simple syrup
  • 2 dashes Angostura bitters

Named after a well-to-do American expatriate in Chile who preferred his Gimlets fresh and spiced, rather than with preserved cordial.
