Rabo de Galo (“cocktail” in Brazilian bar slang) stirs cachaça with sweet vermouth and usually Cynar or Angostura into a compact aperitivo. It is Brazil’s answer to a spirit-and-vermouth short drink—bitter, grassy from cachaça, and sessionable before dinner.
