Raspberry Italian Cream Soda
A raspberry Italian soda finished with heavy cream for a soft pink float.
The Raspberry Italian Cream Soda is the kid-favorite cream variant: raspberry syrup and cold club soda over ice, then a pour of heavy cream floated or stirred once so the drink turns cloudy pink and dessert-soft. Berry brightness keeps it from tasting like plain sweet cream soda. It is still an Italian soda — just finished with dairy the soda-fountain way.

- • 5 oz club soda
- • 1 oz heavy cream

Bartender's Note
Add heavy cream last and stir only once for a soft float. Half-and-half works if you want it lighter; skip cream for a plain Raspberry Italian Soda. Use a true red raspberry syrup rather than blue candy syrup.
