The Rebujito is the staple drink of the the Ferias (fairs) in Southern Spain, offering a lighter, more refreshing alternative to Sangria. It mixes salty, dry Manzanilla sherry with sweet lemon-lime soda (like 7-Up or Sprite) and plenty of fresh mint. The result is a crushable, effervescent highball that cuts through the heat of an Andalusian summer. It is low in alcohol but high in hydration and flavor.

  • 2 oz Manzanilla sherry
  • 4 oz lemon-lime soda (Sprite or 7Up)
  • Fresh mint sprig

Did you know?

While relatively modern compared to sherry itself, it has completely supplanted other mixed drinks at the Seville April Fair due to its refreshing nature.

Do not muddle the mint; just slap it to release oils, keeping the drink crisp and clean.
