Havana’s El Floridita daiquiri variation with grapefruit juice and maraschino liqueur.
The Floridita Daiquiri elaborates the classic rum-lime-sugar sour with grapefruit juice and a touch of maraschino. White rum stays clean and light, lime and grapefruit tighten the acidity, and maraschino adds subtle cherry depth without turning the drink heavy. Shaken and served up, it is colder and more layered than a three-ingredient Daiquiri. Constantino Ribalaigua Vert developed the house style at El Floridita in Havana.

Fresh grapefruit juice is essential; bottled juice dulls the drink. Keep maraschino at a quarter-ounce so it seasons rather than sweetens.
