A smoky Paloma variation with mezcal, grapefruit soda, and lime.
The Mezcal Paloma keeps the Paloma’s grapefruit-and-lime highball structure but swaps tequila for mezcal. Smoke and agave depth sit under bright grapefruit, making the drink more savory than the classic. Served tall over ice with salt optional on the rim, it is a summer patio cocktail with clearer character than a basic vodka-soda. Fresh lime is non-negotiable.
