What is Lillet Blanc?
Bordeaux aperitif wine aromatized with citrus peels; the modern bottle called for in Fleming’s Vesper.
The basics
Lillet Blanc is a French aperitif wine: Bordeaux wine fortified and aromatized with citrus peels and a modest bittering component, bottled around 17% ABV. It is not vermouth — wormwood is not the structural botanical — but it fills a similar role in shaken and stirred spirit-forward drinks: wine acidity, light sweetness, and aromatic lift against gin or vodka.
The current formula is milder and less quinined than the mid-century Kina Lillet Ian Fleming specified. In recipes that say Lillet Blanc, use this bottle; for a more bitter Kina-style edge, Cocchi Americano is the usual substitute.
How it tastes
Honeyed white wine, orange peel, light quinine bitterness, and a soft floral finish. Sweeter and fruitier than dry vermouth; less bitter than Cocchi Americano. Oxidation dulls the citrus and leaves a flat, winey edge.
Where it comes from
The Lillet house in Podensac dates to the late 19th century. Kina Lillet — the bitter, quinine-forward bottling named in Casino Royale (1953) — was reformulated in the 1980s into the softer Lillet Blanc sold today.
That literary specification is why the Vesper remains the drink most associated with the brand in English-speaking bars, even though Lillet also appears in other aperitif and equal-parts classics.
How to use it
Refrigerate after opening and use within a few weeks, as with other aromatized wines. In a Vesper, measure ½ oz against 3 oz gin and 1 oz vodka; shake (or stir) very cold and finish with lemon peel.
Do not treat Lillet Blanc as a 1:1 dry-vermouth swap in a martini without tasting — it is sweeter and more citrus-forward — and reach for Cocchi Americano when a recipe wants more bitterness than modern Lillet supplies.
Note
Fleming’s Casino Royale calls for Kina Lillet by name; Lillet Blanc is the successor bottle, not a verbatim reconstruction of that 1950s formula.
