Rum is distilled from sugarcane products — molasses or fresh cane juice — then often aged. Unlike bourbon, there is no single global mash-and-barrel law, so “rum” covers a wide range of production styles.
For cocktails, think in jobs: clean mixing rum for citrus, aged rum for body and oak, funky rum for aroma intensity.
