What is Pumpkin Pie Irish Cream?

Pumpkin pie Irish cream is an emulsion liqueur: Irish whiskey or a similar spirit, pasteurized cream, sugar, and pumpkin-pie flavorings, homogenized so the dairy stays stable. Kavanaugh’s pumpkin pie Irish cream is the grocery bottle MixWise recipes assume. It is typically 15–17% ABV, in the same strength band as Baileys.

It is not plain Irish cream plus a pinch of spice, and it is not pumpkin pie liqueur, which has no dairy. One pour does the cream, the sugar, and the pumpkin.

Sweet cream, pumpkin-pie spice, vanilla, and a little whiskey heat. It drinks like Baileys pointed at dessert. In hot coffee it recedes into a pumpkin latte; in a mudslide it replaces both the Irish cream and any extra spice.

Acid will curdle it. It is not a substitute for pumpkin pie liqueur in a shaken sour.

Baileys created the commercial Irish cream category in 1974. Seasonal flavor extensions — pumpkin pie, chocolate, mint — followed once the emulsion technique was cheap to copy. They show up in liquor stores each fall next to peppermint schnapps and are aimed at coffee and dessert drinks, not sours.

Refrigerate after opening. Build with coffee, whiskey, vodka, coffee liqueur, and hot chocolate. In a Pumpkin Pie Irish Coffee, one ounce replaces the sugar and most of the cream cap. In a Pumpkin Pie Shot, float it over pumpkin pie liqueur.

Do not shake it with lemon or lime. If a recipe lists cream and pumpkin syrup separately, this bottle can replace both — taste before adding more sugar.
