Pumpkin Pie Cider cocktail made with Pumpkin Pie Liqueur

What is Pumpkin Pie Liqueur?

A sweet, low-proof dessert liqueur flavored with pumpkin, vanilla, and baking spice. Mr. Stacks is the common liquor-store bottle. It is not pumpkin spice syrup and not a cream liqueur.

The basics

Pumpkin pie liqueur is a compounded dessert cordial: a neutral or grain spirit base, sugar, and flavorings meant to taste like pumpkin pie — pumpkin, cinnamon, nutmeg, clove, vanilla, sometimes a graham-crust note. Grocery bottles such as Mr. Stacks are typically 15–21% ABV and appear in the fall section next to peppermint and butterscotch schnapps.

It is not pumpkin spice syrup (non-alcoholic sweetener) and not pumpkin pie Irish cream (dairy emulsion). Substituting one for another changes sugar, proof, and texture.

How it tastes

Pumpkin-pie spice, vanilla, and cooked-squash sweetness. Thicker and sweeter than 1:1 simple syrup, with enough alcohol to sit next to vodka or whiskey. No dairy — the liquid stays clear-to-amber, not creamy.

It is louder than a homemade pumpkin spice syrup. A half-ounce to three-quarters of an ounce is usually enough.

Where it comes from

American flavored liqueurs followed the same pumpkin-spice wave as coffee-shop lattes in the early 2000s. Bottles labeled pumpkin pie, rather than pumpkin spice, lean dessert: crust and vanilla as much as baking spice.

They exist because home bartenders would not otherwise make a pumpkin syrup. The useful bar use is as a measured modifier, not as a shot.

How to use it

Use it where a recipe wants pumpkin flavor and sweetness without cream: espresso martinis, cider highballs, and whiskey drinks that can take a half-ounce of sweet liqueur. In a Pumpkin Pie Espresso Martini, three-quarters of an ounce replaces the syrup that most people do not have. In a Pumpkin Pie Shot, it is the bottom layer under pumpkin pie Irish cream.

Do not pour it into a citrus sour at syrup volumes without tasting — it is sweeter and thicker than 1:1 simple. Refrigeration after opening is optional; treat it as a liqueur, not as pumpkin puree.

Note

Most of the “pumpkin” in these bottles is spice and vanilla. The pie association is the flavor target, not a puree content claim.
