The Pumpkin Whiskey Sour applies the classic sour template — whiskey, lemon, sweetener — with pumpkin spice syrup in place of plain simple. Lemon keeps the drink bright so the spice does not read as pie. Shaken and served up or on a rock, it is one of the cleaner ways to put pumpkin in a whiskey glass.

“Sours absorb seasonal sweeteners cleanly: pumpkin spice syrup behaves like orgeat or maple — a flavored sugar that still needs citrus.”

Bartender's Note
Fresh lemon is required. An optional egg white makes a denser foam but is not needed for the flavor. Taste the syrup first — some commercial bottles are much sweeter than 1:1 simple.
