What is Pumpkin Spice Syrup?
Simple syrup seasoned with pumpkin pie spice and, optionally, a little pumpkin puree. A fall well bottle, not a dessert in itself.
The basics
Pumpkin spice syrup is flavored simple syrup: sugar and water plus the baking-spice blend sold as pumpkin pie spice (cinnamon, ginger, nutmeg, allspice, clove), often with a spoon of pumpkin puree for body and color. It is a sweetener, used in the same volumes as simple syrup or maple — typically a quarter-ounce to three-quarters of an ounce.
It is not pumpkin liqueur (alcoholic, sweeter, thicker) and not pumpkin puree poured straight into a shaker, which makes drinks muddy unless strained.
How it tastes
Cinnamon, ginger, nutmeg, clove, and sugar, with a squash note if puree is used. Commercial bottles lean vanilla-and-cinnamon candy; a homemade version with real puree tastes more like roasted pumpkin and less like a latte sauce.
Where it comes from
Pumpkin pie spice is a twentieth-century American grocery blend. Coffee shops turned it into a seasonal syrup in the early 2000s; bars followed with espresso martinis, Old Fashioneds, and mules once the bottle was already on the coffee-station shelf.
The useful bar version is still a 1:1 syrup with spice — not a puree smoothie.
How to use it
Simmer 1 cup water with 1 cup sugar, a tablespoon of pumpkin puree, and a half-teaspoon of pumpkin pie spice for a few minutes; strain; cool; refrigerate. Store-bought pumpkin spice syrup works if you taste it first — some are much sweeter than 1:1 simple.
Start low. In an Old Fashioned, a quarter-ounce is enough. In a mule or sour, a half-ounce seasons without turning the drink into pie. Too much clove reads as potpourri. For an espresso martini, MixWise uses pumpkin pie liqueur instead — a bottle people actually have.
Note
Pumpkin spice is mostly cinnamon. The pumpkin, when it is there at all, is a texture and color cue more than a primary flavor.
